- Purée tomatoes in a blender, set aside.
- Heat oil in a 4 quart saucepan over medium heat. Add onions and cook for 3-4 minutes, add garlic and stir occasionally until softened and golden, approximately 7 minutes. Add spices and cook for a minute. Add tomato purée, tomato paste, brown sugar and vinegar.
- Simmer until thick, 35-55 minutes. Stir frequently towards the end of cooking to prevent scorching. Cool. Purée until smooth.
